View Full Version : Red kidney bean sauce and pasta

2 tablespoons olive oil
1 medium onion - diced
1 or 2 cloves garlic - crushed
4 oz can of peeled tomatoes
4 oz can of red kidney beans - rinsed
teaspoon mixed herbs
4 oz mushrooms - diced
1 small courgette - diced
black peppar
I don't use salt but you may prefer to add some

4 oz fresh pasta of your choice

heat olive in sauce pan
cook onions until soft
add remaining ingredients
cook slowly, there should be enough moisture in the tomatoes but you can add a little vegetable stock if necessary.
simmer for 35 minutes

cook pasta in separate pan, when both are ready add sauce to the pasta and stir.
spinkle with parmasan cheese
serve with garlic bread and green salad

Red beans is my favorite dish. Thanks for posting the recipe, pasta isn't my favorite but still I would give it a try.

You could also use it as a sauce for anything else...it is good with rice and over baked potatoes. I have even eaten it simply over garlic bread - even on plain bread. It is even tastier the second day as it gives it times for all the flavours to mature.
