These will make your meat eaters happy too.

2 bags frozen tvp/or 2 pkgs firm tofu
1 diced onion (white yellow or red)
3 diced tomatoes *
2 diced green chilis *
1 packet taco seasoning
10 corn tortillas
1 cup veggie stock
10 oz. grated cheese/vegan cheese

Saute tvp, onion, tomato, green chilis, and seasoning in pan until onions are clear. About 6 minutes.
Grease baking dish (8x12), dip tortilla in veggie stock and layer with filling and cheese three times and top with cheese.
Cover and bake in the oven at 375degrees about 20 minutes.

*diced tomatoes and green chilis can be substituted with a can of Rotel to save time and add heat.

guacamole and pico de gallo add a great freshness to the dish.

That sounds pretty good. Do you think that will taste just as good with fruit instead of vegetables?

MMMM...looks yummy. I really like quacomole, and I would probably just use ground soy protein. It seems pretty simple to make as well. Thanks for the recipe!
