Please could you give me some ideas for meals for a veggie who does not eat onion, garlic, spices and does not like strong tastes and refuses to eat tomatoes. It makes it very hard.

Mashed potatoes is a good base for a meal that might appeal to pickier eaters. You could go as simply as mashed potatoes and a mild gravy, with maybe some mushrooms and/or veggie-crumbles for protein. Will they eat eggs? A nice cheese omelet might fill the bill. A little rice on the side is nice. Perhaps a little veggie stir-fry with the mild tamari sauce? You've got quite a challenge there! Hope some of this helps....

baking veggies with some cheese can be a good option for you. Or try stweing them.

Thanks for the advice, yes she eats eggs, cheese, rice and she loves mushrooms. I have done various stir-fry variations for her. You are right, it is a challenge!

Use fresh herbs for taste instead of spices, like drizzling lemon juice and parsley over chick peas or thyme on sauted red and green peppers.
I need some recipes for myself, too. I'm an extremely picky vegetarian; I don't even like salads! I usually end up eating foods with fruit and cheeses. Can anyone recommend to me something with nuts. What do you suggest I do when I start to run out of dinner ideas?

Lyndsey, thank you I appreciate the advice, but when I said she didn't like strong tastes I should have been clearer, she eats everything totally bland. She will not eat anything flavoured with herbs except a hint of mint with boiled potatoes. she doesn't like peppers because of the taste and she doesn't like chick peas. So out of that list I am left with the lemon juice! Cooking for her drives me mad.
