Is there a particular vegetables that we should eat during the first week of being a vegetarian? I mean, there are lots of vegetables to choose from. As being one of them, what would you suggest?
The DIY stores stock good books on vegetable growing. 'Be your own vegetable expert' by Hessayon is a good one. The recognised starter vegetable is potatoes as these break up the land. Perpetual spinach is easy if you like spinach! Read the book and choose your favourites.

Well, I did not really start out with anything in particular. But, I think that it is important to maintain a diet that is inclusive of grains, all colored veges and fruits for a balanced diet

Potatoes would be great then. I hope I can have these in my garden. :) "Be your own vegetable expert" that could be a good book to start. If I would cook vegetables, do I have to put a little meat to it or none at all?

There are no rules for starting the vegetarian foods.. you can have any vegetables. but it would be easy for you if you can take vegetables that is prepared like non veg food.. so that you can easily adopt.
