This is a delicious Lebanese Hummus recipe my friends shared with me.

1 pound dried chickpeas
1/2 teaspoon baking soda
5 tablespoons of Tahini
2 tablespoons of Plain yogurt
4 medium garlic cloves
1 teaspoon salt
Juice of 1 lemon

Soak 1 pound of chickpeas in water overnight with 1/2 teaspoon of baking soda. Make sure chickpeas amply covered with water. In the morning thoroughly rinse chickpeas, add just enough water to cover and cook on medium heat till tender. Drain. Mix 4 cloves of garlic and 1 teaspoon of salt (mortar/pestle or other means). Mix chickpeas and garlic/salt mixture in food processor or use potatoe masher. Add 5 tablespoons of Tahini and mix. Add 2 tablespoons of plain yogurt and mix. Finally, adding the juice of one lemon.

The presentation was beautiful - hummus was spread over plate with a well in the middle. Olive oil was drizzled over the center. On four sides of the plate was a half circle of lemon with paprika on the top of the circle and a sprig of mint.

That sounds great, and that's a good idea for presentation as well. I enjoy it when I have it but I've never made it.

I guess pita wedges are the traditional things to serve with hummus?

Yeah, that's a nice basic recipe. I like those best because you can add pretty much anything you want to them without messing up the taste (unless you're me, then you will find a way). Pita isn't the only thing that goes with hummus though; basic veggies are nice, carrots, cu***ber, etc. Crunchy stuff.
