I believe in making cooking as easy as possible. This is one I serve quite a bit.
will serve 3-4 people

Ingredients:
4 large flatcap mushrooms - diced (these give a lovely deep colouring. OR you can use a variety of mushroom types and darken with soy sauce.)
1 medium onion - diced
2 tablespoons of olive oil
1 tablespoon of plain flour (you may use cornflour to thicken instead.)
1/2 pint vegetable stock
teaspoon mixed herbs
1 clove garlic - crushed
4 oz soy mince
peppar and a LITTLE salt

Method:
heat olive oil in saucepan
fry onions until soft
add garlic, mushrooms and minced soya
if you are using flour add at this stage
add stock
add remaining ingredients

Simmer for 30 minutes.
If you have NOT used flour, then thicken with cornflour.

serve with potatoes and leafy green vegetables

I love using cornflour to thickening things. I find it works better all around. I will have to try this. We all like mushrooms in my family and I have never heard of mushroom stew before. 'Thanks for sharing this one.

I just realised I had put down 1 pint of stock instead of 1/2 pint of stock. sorrryyyy it would be a bit on the thin side with 1 pint. :o:rolleyes:
